National Ice Cream Day is celebrated each year on the third Sunday of July.

This year that falls today, Sunday, July 16, and we can only but imagine that people all over the world are celebrating by tucking into a large scoop or three of vanilla.

But what about vegans? All that cream and milk that goes into ice cream makes it very much a non-vegan friendly treat.

Luckily for vegans, or those who need to eat dairy free, it’s more than possible to make delicious and even healthy, if that’s what you’re looking for, vegan ice cream.

Piña Colada* #nanaicecream 🍍🍌🍦 recipe below in celebration of Mother’s Day here in Sweden with my little ones. The little blondie digging in is my poppet Lillian. Fruit is her favourite thing. Next to cuddles. And playing with her “girlfriends” (she’s a very social little thing!) : INGREDIENTS 1 large ripe organic banana (or 1.5 if you want a thicker consistency) 1 small organic pineapple 50 ml desiccated coconut 50 ml coconut cream DIRECTIONS Cut the flesh out of the pineapple (it doesn’t have to be neat- you’ll dig the rest out later with a spoon!), chop the banana and freeze both. Tip frozen fruit, coconut and coconut cream into a food processor or high power blender and blitz until smooth and creamy. Scoop nice cream into the pineapple shell or bowls, decorate if you like, sprinkle with coconut flakes and serve!
